I was thinking today about Poor people and rich people.

Years ago all of us poor folks drove pick up trucks. They were cheap, some way to haul a lot of stuff and were easy to work on. Now all the Rich folks drive big ass trucks with every gadget known to man. Some of the monster trucks they drive are hard pressed to carry a six pack of beer.

When our cars and trucks would not run, we rode our bicycles to work. No big deal. we did not call it "commuting", they called it "gitting to work" No fancy riding clothes, Levis and a sweatshirt had to do. Of course you had to roll up your pants leg so your pants would not get caught in the chain

Poor folks wore boots with Short pants. Could not a afford a pair of 50 dollar "sneakers" when we had paid 125 dollars for a pair of Red wing work boots. Now it is in style to wear boots and shorts.

They lived in small houses, cheap, easy to heat and cool and did not cost much to maintain. Now all the Big timers are downsizing to "cottages" and smaller houses.

They ate Grits and beans and rice. Not many people ate Shrimp so they were cheap and in turn was a staple of our diet. They took tough cuts of meat and boiled them until they were tender and then grilled them. They called it BBQ. Now all the Rich hoot and holler about "girts a yaya". LOL Now, poor folks food is called "Ethinic or traditional" They called it good eating, a way to survive cheaply.

When poor folks needed to exercise, they did not need a chrome and glass gym. Poor folks just ran up and down the beach or in the park until  they got tired. Poor people had to work hard and getting too much exercise was the issue not the lack of it.

I guess imitation is the most sincere form of flattery.
LOL  Sad part is that they think we envied their life style.

I've spent a lot of money on entertainment in the last few years.
Taken trips to Hawaii and San Francisco and Key West and D.C. and New York City and the Georgia and North Carolina mountains.  I've bought a 55" tv and pay over $100/month for DirecTV.  I've paid a lot of money for tickets to Hangout Festival,  Bayfest and many other things.
And so much other stuff that I can't even think of.

But during all of that,  the best entertainment I've had was going down to the bayfront and just hanging out to watch the incredible blend of what is made by nature and man.  Especially the part where the seagulls hover in the air right in front of my face while they take a piece of bread out of my hand.  
And it's all free of charge.

The poor in this country can get up every morning and take a hot shower and eat food. They can watch incredible entertainment on a little box, get history's best medical care, and travel in relative safety throughout a nation which is simply incredible. The biggest bitch is that poor people in America are richer the greatest Kings four hundred years ago........and the thing about poor people which Bob has nailed......they can go through life doing nothing but enjoying and this stick's in the craw of folks who want to have a great distinction from themselves......as if by divine intervention they have been chosen for happiness, yet all the money in the world will not buy one second of happiness and just look at this forum to confirm the same.

Now the new F150 and their cast aluminum body and shedding almost eight hundred pounds is going to make Hallmark even more angry.....a pick up with 10 percent better mileage and yuppies driving trucks.....rich or poor this is a great country.

I bought a truck a few months ago.  I had been looking for one for two years. I wasn't looking for a show truck,  a work truck,  a Ford or a Chevy.  All I wanted was a truck in good mechanical condition that I could buy for less than it was worth (i.e. less than I could sell it for).
I finally found a 2004 Tundra,  single cab,  manual transmission, V6 with relatively low mileage for about $2k less than I could sell it for.  
So now I'm driving a pickup for free for about the next two years.  Well not actually free because I have to pay for the tag and insurance and gas.  But at the end of the two years I will have a truck that I can still sell for what I paid for it.  And being that it's a Tundra it's unlikely that I will have to do any repairs on it during that time.

You don't need to have a lot of money to have wheels.  And even if I had a lot of money I wouldn't have thrown it away on a new "show truck".  To me,  a truck is a truck.  Same as it was to Sam Walton...

You still have difficulty with concepts. Especially the simple ones. An antibiotic taken in France, or an appendix removed in Germany are still the best health care in history, and the state of medical science does not have national boundaries......you really do think leeches applied 200 years ago will take the place of modern medicine, which in your simple world can only exist in the United States......it is no wonder we have lost that honor.....we are still floating on the genius and hardwork from fifty years ago while other nations get the best and brightest and are leading in health innovations.....well it is becoming crystal clear......mediocrity and superstition have supplemented our medical curriculum.

We grew up eating grits, beans, rice, fish and shrimp. Seafood along with grits was expected. Perhaps we ate like that because my parents and grandparents lived through the depression. If we had ham...it was a given that in a couple of days we would look forward to and enjoy a huge pot of dried lima bean soup with the left over ham bone.

At any rate.....we ate and continue to eat these items.....traditional or ethnic who cares it was great food and still is.

Yep. all of the above is true. I think there is some strange kind of magic that occurs in that area. We have seen some unforgettable shit.

Think of the afternoon we were there out toward the end of the sailboat jetty enjoying the fresh air, the beauty of the water, the swooping flight of the gulls, and a nice little toke; and then we heard the sound drums, not toy drums, but full size snare drums. We looked and coming our way were three dudes dressed up in Revolutionary War soldier outfits. They were marching in step and went to the end of the jetty, turned about face and marched by us again going the other way. They marched away and out of sight and sound. Now that was a happening. I think it was the Fourth of July.

every weekend my wife makes a big breakfast which includes eggs over easy on top of a plate of grits.......people are shocked at the volume on the plate.....and it is gone. I remember the preserves my grandmother put up and especially the pear preserves and the fresh honey which my grandfather kept in his garden. The bees pollinated the fruit trees, and the garden was ample for the year as they canned everything. They got rid of the chickens when I came along, but my mother hated ringing their necks, and the bbq chicken as a kid was delightful.......Okra, blackeyed peas, fresh beans, and the best cinnamon toast made life fun, and the fresh backed bundt cakes.

Growing up, I thought it was routine (everyone ate it) to eat fried eggs on top of grits with crumbled bacon on top. I never knew you could eat black- eyed peas without steamed okra on top of rice or eat fresh green beans without new potatoes cooked with them. Fried fish always included grits, hushpuppies and baked beans.

That was a sight to behold.  All of a sudden they appeared out of nowhere.

On more than one occasion when we're down there we've thought about all the thousands of locals who are sitting at home looking at a lousy tv set when all that real life beauty is there to behold and only a small handful of people ever will discover it right here in our backyard.  It's mind-boggling to think about what people overlook.  They can't see the forest for the tv trees.

What exactly is grits a ya ya?  Somebody told me it was similiar to nassau grits like at the Coffee Cup only better.  Which is good cause I'm not fond of the nassau grits they serve.
What's added to the grits to make grits a ya ya?

And while we're on the subject of grits. I've tried to make grits at home that are as good as you can get in the old southern greasy spoon diners but I've never been able to. Is there a secret to it?

Sunday I rode downtown to the Wall South/Admiral Mason Park.  Then to 3 mile  bridge then turned and rode west staying as close as I could the water front. Palafox Pier. Stoodervill,Pattis, Sanders Beach, Bayou Chico bridge, Bay shore drive, Star Lake then the Big water front Loop at Navy point.  When I got home I thought "DAMN"!!!!  What a great place.....   Hard to believe that there has been so much controversy over such a small section of the water front ..... It is a great place to live.

Grits à Ya Ya

4 servings

Smoked Gouda Cheese Grits:

1 quart chicken stock
1 cup heavy cream
2 cups Dixie Lily grits
1/4 pound butter
1/2 pound shredded smoked Gouda cheese
The Ya Ya:

8 strips applewood-smoked bacon, diced
1 tablespoon minced garlic
1 tablespoon minced shallots
3 tablespoons butter
White wine
1 pound peeled and deveined jumbo shrimp
1 portobello mushroom cap, sliced
1/4 cup diced scallions
2 cups chooped fresh spinash
2 cups heavy cream
3 cups smoked Gouda cheese grits
Salt, pepper and hot sauce to taste
Method

First, make your grits. Run the chicken stock into a thick-bottomed saucepan and turn on high til it boils. Mix in the grits and stir like crazy. Reduce to a simmer and allow to cook for 40 minutes, stirring occasionally. Add cream if you need more liquid. Then tumble in the butter, drizzle in the rest of the cram and stir til it's all in the family. Then shake in the shredded cheese and stir very well til it's all nice and smooth.

While your grits cook, bring a large saucepan to medium heat. Add bacon and cook for about 3 minutes, then add garlic and shallots. Sauté and then add butter and a splash of white wine. When the butter is half melted, add the shrimp. When the downsides of the shrimp become white, flip them and add mushrooms, scallions and spinach. Sauté for 2 minutes. Remove the shrimp. Pour in heavy cream and let simmer while stirring. When reduced by one third, add salt, pepper and hot sauce. Return shrimp to the sauce and combine. Spoon the sauce and shrimp onto heaping mounds of cheese grits.

Salt the water bring to a boil and add grits (Jim Dandy quick grits) Stir in butter, reduce heat and simmer covered for about 20 minutes. Add cheese (cheddar or gouda) and a little milk and more butter if needed. I guess the secret is lots of butter, salted water and simmer longer than specified.
