Number 1 on this list is fish-heads, along with trash fish and bycatch. I guess we are throwing away edible parts of fish, and other sea creatures which are edible in bycatch, and eco-concious eaters may not want to pass these up. Fish-heads offered in a restaurant may look like this:
When I was stationed here in the early 80s, I knew some old ladies from Jamaica, and I would sometimes bring them some of the fish I caught in local waters. They never wanted me to clean them for them, because they wanted the heads intact. They told me the head is the best part of the fish, and when they were young, they would fight with their siblings over who got to eat the head of whatever big fish their mom was cooking for dinner.
I dunno if I could eat fish-heads myself, however...
