It is rumored that the death panels under the Affordable Care Act are going to outlaw thin mint Girl Scout Cookies. Rush has kicked his oxy habit, but he is on the airways calling for President Obama"s impeachment for interfering with his thin mints.

Never Fear! I just happened to have this in my Obama Protest Kit.

Skinny Mint Cookies are super easy to make and taste like the Girl Scout's treat, but they're bigger! The chocolate wafer cookies I use are Nabisco's Famous Chocolate Wafers. Those are the cookies used for Old Fashioned Chocolate Dessert too. For the picture, I found these fabulous mint flavored plain chocolate cookies called Anna's Chocolate Mint Thins. They're spectacular with this treatment.
Prep Time: 15 minutes
Cook Time: 3 minutes
Total Time: 18 minutes
Yield: 30-36 cookies
Ingredients:

2 cups semisweet chocolate chips
2 cups milk chocolate chips
20 unwrapped Andes candies (chocolate mints)
1/8 teaspoon peppermint extract
1 (9-ounce) package plain chocolate wafer cookies

Preparation:
In medium microwave-safe bowl, combine semisweet chocolate chips and milk chocolate chips. Microwave on high power for 1 minute; remove and stir. Return to microwave and cook on 50% power for 1 minute longer; remove and stir. Continue microwaving at 50% power and stirring until chips are melted and mixture is smooth.

Remove from microwave and stir in the chocolate mint candies until smooth. Add peppermint extract and stir until combined.

Dip the cookies, one at a time, into the chocolate mixture. Gently shake off excess chocolate and place on waxed paper to cool and set. Store in cool place

Come on now, Pkr, you know full well we are too far beneath the progressive elitists on this forum who, by self declaration have deemed themselves......EXPERTS.

Obviously, they will have to do the conversions for us low volters.

Then again, I'd rather be a low volter than support one.
